salted chocolate peanut butter truffles


I am slightly obsessed with all things chocolate peanut butter. It is the best combination in the history of combining, in my opinion. So, these truffles are one of my new favorite treats, without a doubt. And perfect to share with your favorite people this Christmas!

One of the best parts is that there is no baking involved, and they come together with a few easy ingredients. 

Salted Chocolate Peanut Butter Truffles
makes about 50

2 cups creamy peanut butter*
1/2 cup butter, softened
1 teaspoon salt, + more for sprinkling
3 cups powdered sugar
3 cups rice crispy cereal
3 cups dark chocolate chips
3 tablespoons coconut oil

Using a mixer, or handheld beaters, mix together peanut butter and butter until smooth. Add in salt and powdered sugar and mix on medium speed. With a wooden spoon or spatula, gently mix in cereal. Form dough into balls and place on a cookie sheet. Put them in the freezer for about 30 minutes to firm up.

Place chocolate chips and coconut oil in a microwave safe bowl, and melt for 45 seconds. Stir. Heat for another 30 seconds and stir. Repeat until chocolate is completely melted. Using a wooden skewer, dip peanut butter balls into the chocolate, tap gently to remove excess chocolate and set on parchment paper to harden. While the chocolate is still soft, sprinkle with a pinch of sea salt.

Repeat with remaining truffles until complete. Store in the refrigerator to keep them firm. Try not to eat 10 in one sitting. Not that I know anyone who would ever do that. Enjoy!

*I used all natural, no sugar, creamy peanut butter. It's nice and soft and easy to mix. If your peanut butter already has sugar added, taste along the way as you add in the powdered sugar or the mixture may be way too sweet.
