When the nice people at organicgirl got in touch with me to see if I wanted to try their new baby kale, I didn't hesitate.
They have great, fresh products, and I hadn't used baby kale before.
I loved it! It's texture is more like spinach than full grown kale - so there is SO much you can do with it.
They sent me a handful of recipes, for everything from salad to smoothies to muffins.
You can use it just like you'd use spinach - so the possibilities are endless.
And it's a major superfood, so you can feel good about it, no matter how you use it.
I decided to make muffins with it, using one of the recipes they'd sent.
They were so so good, my kids devoured them.
strawberry banana baby kale muffins
makes 12 muffins
2 cups organicgirl baby kale
8 strawberries (I used frozen ones)
3 ripe bananas
3/4 cup sugar
1/4 cup canola oil
1 tsp cinnamon
1 1/2 cups flour (I used half whole wheat, half all purpose)
1 tsp baking soda
1/4 tsp salt
Puree the bananas, strawberries and kale in a blender or food processor.
Combine remaining ingredients in a mixing bowl.
Add in the puree and mix until just combined.
Spoon evenly into lined muffin tins and bake at 350F for 20-25 minutes, until golden.
Allow to cool and enjoy!
Each muffin only has 155 calories - so it's a healthy little breakfast with a super boost!
