Whenever I think of doing a little detox from heavy food and baked goods, I think soup.
I have a few recipes for hearty, healthy soup, but today I decided to experiment.
And it was awesome.
It's a little reminiscent of pho, and it's absolutely delish.
It is super low in calories and fat, so it's not going to fly as an entire meal for most people, but it's great for a little detox.
You could add noodles or rice for something more substantial if you need it.
2 medium boneless, skinless chicken breasts, roasted and shredded
2 cups haricot verts (french green beans)
1 medium yellow onion, sliced
4 cups shredded cabbage
4 ounces white mushrooms, sliced
2 teaspoons olive oil
4 cups low sodium chicken broth
2 cups water
2 tablespoons cooking sherry
2 tablespoons low sodium soy sauce
2 teaspoons chinese 5 spice
2 teaspoons sriracha
salt to taste
Heat olive oil in stockpot and add in all of the vegetables.
Saute for 5-8 minutes and add in remaining ingredients, except the chicken.
Simmer 20 minutes until vegetables are just al dente.
Add in chicken and heat through.
Serve hot with extra sriracha and soy sauce and enjoy!
This recipe makes four servings at around 175 calories each and 5 grams of fat.
And it's delicious.
Seems like a win, win, win to me. Eat up!
