A couple of days ago I posted this on instagram and twitter:
chocolate chip oatmeal cookies. with cranberries and flax seed to make them healthy,
A few friends requested the recipe upon seeing the prebaked goodness.
The boys wanted you to know that they turned out to be pretty delightful and you may want to make a batch for yourself.
Consider this as evidence.
Here's the recipe, as promised!
Oatmeal Chocolate Chip Cranberry Cookies
makes 4 dozen
1 1/2 cups packed brown sugar
1 cup butter, softened
1 teaspoon vanilla
2 cups oats
1 1/2 cups whole wheat flour (all purpose works, too)
1 teaspoon baking soda
1/3 cup flax seed or flax seed meal
1/4 teaspoon salt
1 cup semisweet chocolate chips
1 cup dried cranberries
Beat sugar and butter until creamed.
Add in egg and vanilla and whip until fluffy.
Mix in oats, flour, baking soda, flax seed and salt until well combined.
Stir in chocolate chips and cranberries.
(Don't be afraid to use your hands - that's how we roll.)
Drop by tablespoonful or roll into little balls and place in rows on a cookie sheet lined with parchment.
Bake at 350 for about 8 minutes or until just golden.
Allow to cool completely before enjoying.
Ha ha, just kidding, just don't burn your mouth. Get after those babies.
Best stored in an airtight container.
