There has been a commercial on the radio for weeks for Qdoba's seasonal mango salsa.
I don't think I've ever actually eaten at Qdoba,
but just listening to the description had me salivating.
So obviously, I googled the recipe.
And oh. my. lands.
It's really good.
I made it last night, along with grilled chicken and it is definitely a keeper.
And when a recipe is that good, I have to share it, right?
Fresh Mango Salsa
adapted from Qdoba
2 mangoes, diced
1 medium cucumber, peeled, seeded and diced
1 red bell pepper
1/2 small red onion
1 jalapeno (seeded if you're
wimpy sensitive to heat)
1/4 cup fresh cilantro, chopped
1 lime, juiced
2 teaspoons agave (or sugar)
a pinch or two of salt
Put your diced mango and cucumber into a bowl.
Roughly chop bell pepper, onion and jalapeno, then pulse in a food processor until minced
(but not liquefied).
Or mince by hand if you aren't super fancy.
Add mixture to mangoes and cucumber.
Add the juice of one lime, chopped cilantro, agave and salt.
Mix well and chill until ready to use.
Trust me when I say it's hard not to eat the whole bowl.
It's super fresh and perfect for summer and downright addicting with tortilla chips.
But it's super healthy, so don't feel too bad.
