Partially because I feel pretty inept at any other kind of meat since I was a vegetarian for 10 years.
Except bacon. And hold the phone: I went to the butcher today and they have bacon ground beef. What now? I am reevaluating my meal plans as I type. I mean, how can I incorporate that into pretty much everything?
And still be healthy. Dilemmas.
Anyway, back to the chicken. I love shredded chicken: in tacos, salads, sandwiches, pasta...
And this is the easiest, tastiest way to make it. So I'm sharing.
What you need: frozen skinless, boneless chicken breasts, olive oil, salt and pepper. optional: lemon slices, garlic, sliced onion.
Grab as many chicken pieces as you need (still frozen).
Put them in a skillet, pie plate, whatever.
Drizzle with a little olive oil, sprinkle with salt and pepper.
I like to slice up a lemon, throw in a few garlic cloves, an onion wedge or two - whatever I happen to have laying around.
Put them on or around the chicken and cover everything with foil.
Stick the whole thing in an oven preheated to 400.
After 25 minutes, flip the chicken, and recover with foil.
Bake another 20 minutes, or until the internal temp reaches 165 F.
You are ready for any recipe!
I have kind of an aversion to boiled chicken, and this is about a million times tastier.
It's no bacon ground beef, but what are you gonna do?
